Mesa restaurant hoods fill with grease

Mesa packs a lot of restaurant kitchens into a few busy stretches, like Main Street downtown and the Asian District near Dobson Road. Every kitchen there pulls smoke and grease vapor up through a hood and out a fan on the roof. The grease that does not make it outside sticks to the inside of the system. It keeps building there until someone scrapes it out.

What you cook decides how fast that happens. A wok line or a charbroiler throws off far more grease than a bread oven, so its hood loads up much faster. Dust and heat hit Mesa rooftops hard

Summer in Mesa brings the monsoon. Big dust storms roll across the East Valley and leave a fine layer on every roof in town. On a restaurant roof, that dust lands on any grease that has leaked out of the exhaust fan. Dust and grease mix into a dark paste that holds rainwater and slowly breaks down the roofing underneath it. Nobody sees it from the parking lot.

The heat does its own damage. A Mesa roof in July gets hot enough to bake leaked grease into a hard crust. That crust takes far more work to lift than fresh grease.
