Phoenix restaurants need clean exhaust hoods
Almost every restaurant kitchen in Phoenix has a hood over the stoves, and every hood collects grease. Hot air off the grills and fryers carries it up through the filters and into the duct. From there it travels to a fan on the roof, and some of it sticks the whole way. Week after week it builds into a thick coat that nobody sees from the dining room. Cleaning that whole system is the main work we do.
Grease left in a duct is fuel. A flare-up on the grill can reach it. A fire inside a duct is hard to put out, because it burns behind walls and above the ceiling. Phoenix adds a second problem on the roof. The fan sits in full sun, and in summer heat the grease inside a dirty fan softens and leaks out. It runs across the roofing and pools. That grease can break down the roof surface, and it can catch fire up there too.
So we clean the full system, from the hood in the kitchen to the fan on the roof. Filters come out and get degreased, and the hood gets scraped and washed. Then the duct gets cleaned along its run. On the roof we open the fan and clean the blades and housing, and we check where the grease drains. If the fan does not tilt open easily, we can fit an exhaust fan hinge kit so the next cleaning goes faster.

We look at each Phoenix building first
Phoenix restaurants work out of every kind of building. Around downtown and Roosevelt Row, some kitchens sit inside old brick buildings or converted bungalows that were never built for a commercial hood. Along the big roads like Camelback and Indian School, most sit in block and stucco strip centers with flat roofs. The exhaust in each one is laid out differently, and that changes how we reach it and how long the job takes.
An older building often has a longer duct with more turns in it, because the kitchen was added long after the building went up. Grease builds up most in those turns and in any flat stretch of duct. A strip center is simpler inside, but the fans on a shared roof sit close together. A leaking fan from one tenant can put grease on the roof above the shop next door. We check the whole run before we give you a price.
Phoenix houses have their own version of this problem, and it is the dryer vent. In a lot of homes the dryer vents up through the roof instead of a side wall, so lint collects at a cap nobody sees. The older houses in neighborhoods like Willo and Encanto were built before home dryers were common, so the vent may take a long way out. Monsoon dust sticks to grease and lint
Every summer the monsoon brings dust storms across Phoenix, and a big one leaves fine dirt on everything outside. On a restaurant roof, that dust lands on a greasy fan and sticks to it. On a house, it packs into the dryer vent cap and mixes with the lint already there. In both places the result is the same: the air that has to leave the building moves slower.
Blocked airflow usually gives you warning signs. In a kitchen, smoke hangs under the hood instead of pulling up, and the cooks feel the heat more. At home, a load that used to dry in one cycle now needs two, and the laundry room runs warm. Either one is a good reason to call. A dryer that cannot push its hot air out is a fire risk, the same as a greasy duct.
The dust and grease land on the ground too. Behind many Phoenix restaurants there is a concrete pad by the dumpster and the grease bin. In the heat it gets slick and smells bad fast. We do commercial power washing and pressure washing for those back pads, and for the sidewalks and entries out front.
