Hoods and vents we clean
A clean hood is easy to fake from the front. Wipe the outside and swap the filters, and it looks fine to anyone standing at the line. The test is behind the filters and up on the roof, where the grease actually sits. Those are the places we spend the most time, because that is where a fire spreads once it gets going.
What bare metal means on a hood
When we call a hood clean, we mean you can see bare stainless steel with no brown film left on it. A thin film left behind catches new grease faster, so a half cleaned hood fills back up sooner than one taken all the way down.
We clean dryer vents the same way
A dryer vent has the same problem as a kitchen hood, with lint in place of grease. Lint builds up along the run, and the dryer runs hotter to push air through it. We clean the full run from the dryer to the outside hood and check that the flap opens freely.
